
Even though the Bay Area only gets summer weather 1 week out of the year, I still like eating cold foods during the season. Mostly out of habit. Growing up, I loved eating these shrimp vermicelli bowls pretty much all year round but especially during the summer! I’ve had almost every variation of vermicelli bowls, but I would say one of my favs is with seafood. To me, meat tends to weigh you down while seafood makes you full without the heaviness. The Vermicelli Noodles This dish comes together pretty quickly. All the ingredients are made separately and assembled right before eating. The first thing I like to do is cook the vermicelli noodles. I like to do this first because I like to let the noodles cool down so they don’t make the fresh veggies too warm. I usually like using the Three Ladies Brand vermicelli noodles.
