
I love the cold brisk mornings of fall. They make me want to stay inside under a warm blanket with a book and a cup of hot cocoa. During this time of year, my favorite dish to make is soup because it provides a good balance to the cold weather. Usually when you think of making soups, you think about the many hours you need to make a great soup, but I beg to differ! I say you can make a perfectly good soup in 1 hour which is how much time this soup recipe takes. Half the time is spent chopping while the other half is spent actually cooking the soup. The shortcut that helps you cut down on time is chicken stock. The beauty of chicken stock is that it already has all this yummy flavor infused into the liquid. I used that as my base and added in a bunch of yummy ingredients (chicken apple sausage, zucchini, orzo, tomatoes, and celery) to round out the dish.
